Jersey Peach Bellini

June 21 is the first day of summer. It’s also National Peaches and Cream Day, so what better way to celebrate these two yummy occasions than with fresh Jersey peaches? Here is our recipe for a peachy-keen, refreshing Peach Bellini. These are so delicious you’ll want more than one, so this recipe is for a pitcher.

Ingredients
3-4 fresh Jersey peaches
1 bottle of chilled Prosecco (can also use sparkling wine or champagne)

Instructions
Peel and quarter fresh Jersey peaches, place in blender and puree. Spoon puree into a pitcher. Pour bottle of chilled Prosecco into the pitcher and stir. Serve in fancy glasses, garnish with a peach slice and enjoy the first day of summer!
