August 16 is National Rum Day

August is host to many “national days”, but two are worthy of mention when it comes to enjoying cocktails by the sea – Watermelon Day (August 3) and Rum Day (August 16). Why not celebrate both with a Watermelon Rum Punch? Make it a slushie by blending in ice, or simply pour over ice for a chilled punch.

Ingredients
3 cups cubed seedless watermelon, frozen or chilled
The juice of 1 lime
1/2 cup rum
Ice cubes

Instructions
Put frozen watermelon chunks, lime juice and rum in a blender. Add ice cubes to achieve desired slushiness (if you don’t want it to be slushie, simply add ice cubes to glasses). Blend well until smooth, pour into two glasses and garnish with small watermelon wedge. Enjoy!
